Grape wine

Grape wine is a oldest fermented alcoholic beverage. It contains 8 - 10% alcohol

Ingredients

 Grape - 1kg

(Thompson seedless, beauty seedless, Arka shyam, Pusa Navrang, Black Muscat are the varieties suitable for grape wine)

Luke warm water - 1L

Sugar - 1kg

Starter solution (5gyeast+10gsugar +50ml water ) 

Potassium metabisulphate - 150mg

Wheat - handful

Clay pot, weighing balance


Procedures 

1. Select ripe fresh and good quality grapes with high TSS(total soluble solids)

2. Remove the fruit stalk to avoid astrigency(fruit stalk contains phenol)

3. Crush the berries to produce must

4. Fill it in clay pot

5. Add sugar to raise the TSS to 20-25°Brix

6. Add luck warm water

7. Add starters solution(dissolve 5g yeast and 10g sugar in 50ml luck warm water and keep it for half an hour)

8. Add Potassium metabisulphate

9. Add wheat

10. Mix the content and close with lid

Note: temperature is maintained at 20-25°C and acidity to 0.6 - 0.8%. Keep it for 3 week for complete fermentation. Stir the content every alternate day. Fermentation is completed when bubble stop. Filter the content on 21st day. Stored in another 21st days and after 42 days wine is ready to serve
