Passion fruit squash
Passion fruits, also known as passiflora, is a flowering tropical vine that grows in warm and humid climate. It also lowers your cholesterol and your risk for diabetes, heart disease, and certain kinds of cancer. Passion fruits also gives your body calcium, magnesium, phosphorus, potassium and folate. These help your kidneys, nerves, muscles, and heart rhythm in big ways.
Squash is a type of unfermented fruit beverage. Squash is diluted before serving(1:3)
Squash
Passion fruit pulp - 250 ml
Sugar - 400g
Water - 350ml
Sodium benzoate - 0.72g (or)
KMS( Potassium metabisulphate) - 0.63g
Citric acid - 8.75g (based on acidity)
Procedure
1. Extraction of pulp: Take fresh, fully ripe, sound fruits and wash them in fresh water. Remove inedible part like peel, stone etc. Cut the fruits. Etract the pulp and strain through muslin cloth or strainer.
2. Preparation of sugar syrup: Prepare sugar syrup by mixing calculated quantity of sugar, citric acid with water. Heat to boil strain through muslin cloth and allow to cool
3. Mix the fruit pulp with required quantity of sugar syrup
4. Add required quantity of KMS or Sodium benzoate along with permitted edible food colour and flavour and mix thoroughly. Dissolve the preservative in a little quantity of squash and mix it through with the product
5. Fill in pre - sterilized glass or plastic bottle leaving a small head space (2.5cm)
Note: Sodium benzoate or KMS is optional, adding for long time storage
